I love the ritual of sipping a fancy drink out of a martini glass or wine from an elegant, long stem wine glass. I found these great "mocktail" recipes on gritandglamour.com. They're made with kombucha, a fermented tea chock full of probiotics. Synergy Triology or Cosmic Cranberry kombucha are delicious and low in sugar. And as V.from Grit & Glamour says, don't underestimate the importance of a fancy glass for these mocktails.
PS: Do not shake the bottle of kombucha or else you and everything around you will be wearing it. To get the sediment (or "mother" as it is called) at the bottom of the bottle to distribute, stick a butter knife or chopstick in the bottle and stir very slowly. The recipes call for Perrier but you can substitute with any sparkling water such as San Pellegrino or Poland Springs
